Sorrel Pesto

Ingredients
- 1⁄4 cup organic green onion
- 1⁄2 cup plus 1 tsp. pure 100% olive oil, divided
- 2 (75 ml) packages sorrel
- 1⁄4 cup slivered almonds
- 1 tablespoon lemon zest and lemon juice
- 1⁄2 teaspoon salt
Directions
- In a skillet on medium heat, cook green onions, with 1 teaspoons olive oil until translucent, about 5 minutes. Place onions and the remaining ingredients into a blender and purée until smooth. Enjoy with baked chicken breasts, fish, pasta or vegetables.
