Sopa De Tortilla

Ingredients
- 2 liters chicken stock
- 1 onion
- 2 garlic cloves
- 2 plum tomatoes, peeled
- 1 tablespoon olive oil
- cilantro
- fried corn tortilla strips
- chile, guajillo that have been washed fried and deveined and cut into small pieces
- shredded monterey jack cheese or queso fresco
- pork rind, in small pieces
- avocado, diced
- heavy cream
Directions
- In a blender combine onion, garlic, cilantro and tomatoes; puree then sauté in oil. Add stock and bring to a boil.
- Serve the broth and have all of the garnishes in separate bowls, either small ones for each person, or larger ones for less clean up.
