Something Different Chicken

Serves: 3-4

Ingredients

  • 1 34 cups water (divided)
  • 1 (5 5/8ounce) box  of flavored couscous (I prefer Toasted Pine Nut Flavor or Parmesan)
  • 5  tablespoons butter, divided
  • 4  tablespoons flour
  • 1  teaspoon seasoning salt
  • 1  lb  boneless chicken cutlet (usually 3 cutlets)
  • 1  tablespoon capers
  • 12  lemon, juice of (@ 1 TBL.)

Directions

  1. In a medium sauce pan, combine 1 1/2 cups water, spice package from couscous, and 2 TBL.
  2. of butter.
  3. Heat to a boil.
  4. Add couscous, cover and set aside.
  5. Put salt, and flour in a large ziplock bag and shake to mix ingredients.
  6. Add chicken and shake to coat.
  7. In a medium saute pan melt 2 TBL.
  8. of butter and and cook chicken until golden brown, do not turn chicken while cooking.
  9. Now turn chicken and add capers, lemon juice, 1 TBL.
  10. of butter and 1/4 cup water.
  11. Cook 2-3 minutes until sauce starts to thicken.
  12. Serve over couscous.
