Soft Carrot and Cumin Cookies

Yields: 25 cookies
Ingredients
- 2 carrots
- 1 1⁄2 cups flour
- 4 ounces parmesan cheese
- 1 egg
- 2 tablespoons olive oil
- 1 teaspoon cumin powder
- 1 tablespoon cumin seed
Directions
- Peel and grate the carrots.
- Place all of the ingredients into a food processor or blender and blend to a smooth dough.
- Roll the dough into a cylinder shape and cover with plastic wrap. Freeze for 30 minutes.
- Preheat the oven to 350 degrees F. Slice the dough into disks and place on a baking sheet covered in parchment paper. Bake for 10 minutes. Cool on baking racks.
