Ingredients
- 8 ounces soba noodles
- 3 tablespoons vegetable oil
- 1⁄2 lb firm tofu, cut into 1/2-inch cubes
- 4 carrots, julienne
- 1⁄2 lb prepped shiitake mushroom
- 1 1⁄2 cups thinly sliced scallions
- 2 tablespoons chopped ginger
- 2 teaspoons sesame oil
- 1 tablespoon soy sauce
- 2 tablespoons seasoned rice vinegar
- 1 tablespoon toasted sesame seeds
Directions
- Boil 5 quarts salted water for noodles.
