Soaked Bread Pudding

From Super Food Ideas magazine. Preparation time does not include soaking bread for 30 minutes.

  1. Break bread into small pieces.
  2. Place in a bowl and cover with cold water.
  3. Soak 30 minutes, drain well, squeeze moisture from bread.
  4. Place dried fruit, butter, marmalade, egg, nutmeg and vanilla in a bowl.
  5. Add bread, mix well.
  6. Blend in enough milk to make a stick consistency.
  7. Pour into greased 18 cm square tin.
  8. Bake in moderate oven 180 C for 1 hour or till firm.
  9. Rest in tin for 10 minutes then turn out.
  10. Delicious hot or cold.
