Snow Crab Cakes

Ingredients
- 1 lb broken snow crab legs
- 1 cup fresh breadcrumb
- 1⁄2 cup minced red onion
- 1⁄4 cup minced celery
- 1⁄4 cup minced red pepper
- 1⁄4 cup chopped chives
- 2 egg yolks
- 2 tablespoons butter
- 1⁄8 teaspoon hot sauce
- 1 teaspoon Worcestershire sauce
- salt & pepper
Directions
- Sweat vegetables in butter until tender. (cool).
- Combine crab, crumbs, vegetables, egg yolks and seasonings.
- Mould in to desired shapes.
- Dredge in seasoned flour, egg wash and dehydrated potato flakes.
- Deep fry until golden brown.
