  1. Heat 1 T oil in a heavy skillet over high heat until hot but not smoking; add half of squash & saute', stirring occasionally until browned, about 5 minute Transfer browned squash to a bowl, then repeat to cook other 1/2 of squash. Return squash to skillet; add garlic & saute', stirring occasionally for 1 minute Add water, salt & pepper; simmer briskly, covered, until squash is tender & most of liquid is evaporated, 6-7 minute Stir in basil.
