Smothered Chicken

Ingredients
- 1 tablespoon vegetable oil
- 1⁄3 cup onion, finely chopped
- 1⁄4 cup green pepper, finely chopped
- 1⁄4 cup celery, thinly sliced
- 1 1⁄2 lbs chicken thighs or 1 1⁄2 lbs chicken breasts, bone-in
- 1 package dry mushroom gravy mix
- 1 (12 ounce) can evaporated milk
Directions
- Heat oil; add onion, green pepper, and celery.
- Saute for 2 minutes.
- Add chicken; cook 7 minutes per side, until browned.
- Combine gravy mix and milk.
- Stir into chicken.
- Bring to a boil; cover and simmer for 15 minutes.
