Smoky Corn & Potato Chowder #5FIX

Ingredients

  • 12 lb  sliced  hickory smoked bacon, chopped
  • 3  celery ribs, chopped
  • 1 (20 ounce) package  Simply Potatoes Diced Potatoes with Onion
  • 1 (11 ounce) can  vacuum packed corn
  • 1  quart half-and-half cream

Directions

  1. Cook bacon in large saucepan over medium heat until crisp. Remove bacon with slotted spoon; set aside.
  2. Add celery to bacon drippings. Cook 10 minutes over medium-low heat or until tender, stirring occasionally.
  3. Stir in potatoes. Cook 5 minutes or until lightly browned.
  4. Add cream and corn. Bring to a simmer over medium heat. Reduce heat to low. Simmer 10 minutes or until potatoes are very tender and chowder is slightly thickened.
  5. Stir in reserved bacon.
