Smoky Chipotle Cassoulet (Crock-Pot)

Ingredients
- 1 lb boneless skinless chicken breast, cubed
- 1 teaspoon salt
- 1 teaspoon ground cumin
- 1 bay leaf
- 1 chipotle chile in adobo, minced
- 1 medium onion, diced
- 1 (15 ounce) can navy beans, rinsed & drained
- 1 (15 ounce) can black beans, rinsed & drained
- 1 (14 1/4ounce) can crushed tomatoes, undrained
- 1 1⁄2 cups chicken stock
- 1⁄2 cup orange juice
- 1⁄4 cup fresh cilantro, chopped
Directions
- Combine all ingredients except cilantro in slow cooker. Cover & cook on low 7-8 hours or in high 4-5 hours.
- Remove bay leaf and garnish with cilantro.
