Smoky Chipotle Caramelized Onions

Ingredients
- 2 tablespoons unsalted butter
- 2 tablespoons canola oil
- 6 large onions, thinly sliced
- 2 chipotle chiles in adobo, finely chopped (or more to taste)
- 3 -4 tablespoons brown sugar (to taste)
- salt
- pepper
Directions
- In a large skillet, melt butter and oil over medium heat. Add onions and cook, tossing frequently, 20 to 25 minutes or until onions are golden. Stir in chipotle chile, brown sugar, salt, and pepper and cook 5 minutes longer to let the flavors blend.
