  1. In a stock pot, melt butter and add chopped carrots, onion, celery and garlic. Saute' till onions are caramelized. Add boullion cubes, chilli seasoning and 6 C water. Bring to a boil, add beans and reduce to a simmer. Cover with the lid tilted and simmer for 2-2.5 hrs adding enough water occasionally to keep soupy. Serve with a dallop of sour cream and shredded cheddar, garnish with fresh chives.
