  1. Heat a little oil in the bottom of your pot. Saute the onions until softened, about 10 minutes.
  2. Add the garlic and saute another 5 minutes.
  3. Add the red wine vinegar and simmer until reduced by half, about 10 minutes.
  4. Add the tomatoes and stock, and salt and pepper to taste, and simmer for about an hour, or until the tomatoes are starting to fall apart.
  5. Add the herbs and then puree in a food processor or using an immersion blender.
