Smoked Sausage Soup

Ingredients
- 1 lb smoked sausage, cut into 1/4 slices
- 1 medium onion
- 3 cloves garlic, minced
- 2 medium carrots, chopped
- 4 medium potatoes, cut into large chunks
- 4 cups chicken broth
- 2 cups frozen corn
- 1 tablespoon dried parsley
- 2 sprigs fresh rosemary or 1 teaspoon dried rosemary
- salt and pepper
Directions
- In a dutch oven or large saucepan, saute the sausage until browned. Remove from pan and set aside. Drain all but 1 teaspoon of the grease and cook the onion and garlic for a couple of minutes, stirring frequently. You could drain all the grease and just add a little oil to saute the onions and garlic.
- Stir the carrots into the pan and saute for another 2 minutes. Add the broth and potatoes. When the potatoes and carrots are nearly as tender as you would like; add the corn, parsley, rosemary and salt and pepper. Cook for 3-4 more minutes.
