Smoked Sausage Soup

Ingredients
- 1 teaspoon olive oil
- 1 (14 ounce) package smoked low-fat sausage, sliced
- 1 1⁄2 cups onions, finely chopped
- 1⁄2 cup celery, chopped
- 1⁄2 cup carrot, chopped
- 2 garlic cloves, minced
- 1 (32 ounce) carton fat-free low-sodium chicken broth
- 1 (14 1/2ounce) can diced tomatoes, undrained
- 1⁄3 cup uncooked long grain rice
- 1 (7 ounce) bag fresh Baby Spinach
Directions
- Heat oil in a Dutch oven over medium-high heat. Add sausage, onion, celery, carrot, and garlic.
- Saute for 5 minutes or until vegetables are tender.
- Add chicken broth, tomatoes and rice, and bring to a boil.
- Cover, reduce heat, and simmer 15 minutes or until rice is done.
- Salt and black pepper to taste.
- Remove from heat and add spinach.
- Stir until spinach wilts.
- Grab a big bowl and enjoy!
