Smashed Potatoes with Green Garlic Butter

Ingredients
- 3 lbs yukon gold potatoes, peeled and quartered
- 1 cup heavy cream
- 2 teaspoons salt
green garlic butter
- 1⁄2 cup butter, softened
- 2 cloves garlic
- 6 tablespoons chopped fresh parsley
- salt and pepper
Directions
- Boil potatoes and salt covered with water until done.
- Meanwhile, place butter, garlic and parsley in food processor and process until smooth.
- Drain potatoes well and place back in pan over low heat.
- Add cream and garlic butter and mash by hand.
- Add salt and pepper to taste.
