Smashed Potatoes

Ingredients
- 10 red potatoes
- 1⁄4 cup olive oil
- 2 tablespoons sea salt
- 1 tablespoon pepper
- 2 tablespoons dried parsley
Directions
- Boil and slightly cool potatoes.
- Heat oven to 425.
- Drizzle a rimmed baking sheet with olive oil.
- Smash each potato with your palm.
- Arrange potatoes on the sheet, sprinkle salt and pepper.
- Roast, turning half way through, until crisp and golden. About 25 minutes.
