  1. Boil and slightly cool potatoes.
  2. Heat oven to 425.
  3. Drizzle a rimmed baking sheet with olive oil.
  4. Smash each potato with your palm.
  5. Arrange potatoes on the sheet, sprinkle salt and pepper.
  6. Roast, turning half way through, until crisp and golden. About 25 minutes.
