Slowcooker Super Chili

Bacon, corn, potatoes, beans...yum! You can fry the onion to make sure it gets good and soft. Also, make sure to fry the bacon crisp, so it doesn't just get fatty in the crockpot. This recipe makes a lot, so make sure you have a BIG pot or make less. Show more

  1. Cook bacon, chop or crumble when cool enough to handle. Parboil potatoes now if you are going to, they will probably take longer to cook than the meat if you don't parboil but just leave the crockpot on and it'll turn out.
  2. *Make sure you get the potatoes into smallish cubes or they will take too long to cook*.
  3. Chop onion and garlic, dice potatoes if you haven't parboiled them.
  4. Add to the crockpot along with corn.
  5. Cube steak and add to the crockpot.
  6. Drain and rinse the beans.
  7. Add all of the tomato ingredients, the BBQ sauce, peppers, beans, bacon, chili powder and sugar.
  8. Stir everything well and turn the crockpot on high.
  9. Check after about 5 hours to see if the potatoes and meat are done, if not, keep cooking:).
  10. Serve with corn bread or garlic bread, if desired top with sour cream, chopped onion, cheese, bacon bits etc.
  11. I'm guessing on the serving and yield quantities, it makes a lot!
