Slow Roasted Tomatoes

Ingredients
- 12 roma tomatoes
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- salt and pepper
- 1⁄4 cup chopped fresh basil
- 2 -3 ounces thinly sliced mozzarella cheese
caper dressing
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon chopped capers
- 1 garlic clove, minced
Directions
- Slice tomatoes in half lengthwise and lay in baking dish cut side up, close together.
- Drizzle with oil and vinegar.
- Sprinkle with salt, pepper and basil.
- Place in 300 degree oven and let roast for 2 hours.
- Then remove and lay cheese slices over the tomatoes.
- Combine dressing ingredients and pour over the top just before serving.
