Slow Cooker Irish Stew

Ingredients
- 1 1⁄2 lbs boneless lamb shoulder, cut in 1 inch cubes
- 6 small potatoes, sliced
- 6 small white onions, quartered
- 6 carrots, sliced
- 2 teaspoons dried rosemary
- 1⁄2 teaspoon dried thyme
- 1 bay leaf
- 2 cups water
Directions
- Combine all ingredients in slow cooker.
- Cover and cook on high for 1 hour.
- Reduce heat to low and cook until lamb and vegetables are very tender, 10-12 hours.
- Season to taste with salt and pepper. Discard bay leaf.
