  1. In a large bowl, mix together the sausage, fennel seed, chili powders, and salt and pepper, to taste.
  2. In a large skillet over medium heat cook the sausage mixture until browned.
  3. Remove it from the pan and set aside; drain off all but 1 tablespoon of the fat from the skillet.
  4. Return the SKILLET to medium heat and add the onions and garlic.
  5. Cook until the onions are soft, stirring often, about 5 minutes.
  6. Add the red wine, then stir in the tomato paste, pureed tomatoes, and dried oregano.
  7. Bring the mixture to a boil and add the cooked sausage.
  8. Turn the heat down and simmer for about 15 minutes.
  9. Taste and adjust seasoning with salt and pepper.
  10. If mixture is too thick, thin it with a little broth or water.
