Sloppy Dude Rolls

This is a spicy twist on the usual "Sloppy Joe" recipes. I love tomatillos but I don't have a lot of recipes using them, so I was glad I found this one. The recipe calls for ground turkey breast, but I use lean ground beef instead. Show more

  1. Preheat the oven broiler.
  2. Place a large skillet over medium-high heat and heat the olive oil. When it's hot, add the ground turkey or beef, breaking it up into small bits; saute until cooked through.
  3. Meanwhile, place tomatillos in a food processor and pulse to a coarse puree. Add the tomatillos to the browned meat along with the onions, garlic and jalapeno. Season with the lime zest, cumin, salt and pepper. Cook for 5 minutes, then add the stock and simmer for 5 minutes more.
  4. While everything is simmering, use a fork to mash the avocados with the lime juice.
  5. Split and toast the rolls under the broiler until light brown, 2 minutes.
  6. To assemble, spoon some of the meat filling onto the bottom of each bun. Top with red onion and tomato slices, and spread mashed avocado on the bun top. Serve with tortilla chips, if desired.
