Slimming World Friendly Smoky One Tray Pork and Vegetables

Ingredients
- 737 g new potatoes (thinly sliced)
- 3 mixed peppers (deseeded and sliced)
- 1 aubergine (cut into chunks)
- 1 courgette (cut into chunks)
- 7 ounces baby onions (peeled and quartered)
- 3 small rosemary sprigs
- 3 bay leaves
- 2 teaspoons smoked paprika
- 1 small garlic (cut in half horizontally)
- low-fat cooking spray
- salt and pepper
- 800 g pork tenderloin, fillet (all visible fat removed cut into 1 inch)
Directions
- Preheat oven to gas mark 7, add all ingredient EXCEPT for the pork and spray with low fat cooking spray season to taste.
- Roast for 10 minutes. Shake the tray and add the pork pieces. Cook for a further 10 minutes. Turn down oven to gas mark 4 and bake for 20 minutes shaking occasionally.
- Discard bay leaves and squeeze garlic out of the halved bulbs, mix with the meat and veg. divide into 4 bowls and serve.
