Skillet Potatoes

Ingredients
- 2 lbs potatoes
- 2 green peppers, chopped
- 1 red onion, chopped
- 1 1⁄4 ounces Lipton Onion Soup Mix
- 2 tablespoons olive oil
Directions
- Combine all ingredients except oil.
- Heat oil in non-stick skillet.
- Cook potato mixture in a covered skillet for 12 minutes.
- Stir occasionally.
- Remove cover and continue cooking for another 10 minutes or until potatoes are tender.
- Alternatively.
- Toss all ingredients in a 9*13 pan.
- Bake in a 400* oven until tender, about 30 minutes.
- Stir occasionally.
