Sinful Baked Sweet Potato (Or Yam)

This recipe is written for one serving. To multiply, leave cooking times as they are and increase ingredients, which are approximate anyway. Super Yummy! I use Sinfire because it is less sweet, but Fireball or the Yukon Jack variation, all sweet cinnamon whiskies, will work equally well. Show more

  1. Heat oven to 400. Cook washed potato, pierce it a couple times with a fork, in microwave halfway, about 2-3 minutes depending on your microwave. Test the whisky for flavor.
  2. Put hot potato on a baking sheet lined with aluminum foil and bake for 30-45 minutes. Test for doneness with a fork or by feel, it should be somewhat soft, same as a plain potato. I find that a quick taste of the whisky, just to test my one shot measurement is prudent at this time.
  3. Chop and fry bacon until almost done, not crisp, remove from pan to drain on paper towel.
  4. In same pan, saute onion until translucent, add garlic and bacon and saute for another minute or two, until garlic is fragrant, but not brown.
  5. Pour whisky in pan (drink a shot or two to make sure it is still the right flavor), reduce for about 30 seconds at medium low heat. Add butter. Drink more whisky, it's good chilled. Set the pan aside until the potato is baked.
  6. Let the potato cool for a few minutes after baking, about the time it takes to pour and drink another shot or two. Open baked potato, fluff the inside and pour the contents of the pan into the potato and stir it up. If you can still walk,serve the potato with more Sinfire, so you can be baked, too. Or a steak, steak is good. Enjoy!
