Simply Shrimp and Spinach Squares #5FIX

Ingredients
- 1 (17 1/3ounce) package puff pastry sheets, defrosted
- 6 ounces fresh spinach leaves
- 1 1⁄2 cups tiny cooked baby shrimp
- 1 cup Simply Potatoes Traditional Mashed Potatoes
- 1⁄4 cup garlic & herb spreadable cheese (such as Boursin or Alouette)
Directions
- Preheat oven to 400 degrees.
- Unfold pastry sheets onto parchment paper and cut each sheet into 4 squares. Top 4 of the squares with 1/2 of the spinach leaves.
- Combine the shrimp, potatoes, and cheese. Spoon this mixture evenly onto the spinach leaves. Top mixture with the remaining spinach leaves.
- Cover each spinach/mixture topped square with the remaining 4 pastry sheets and carefully crimp the edges so that all the spinach leaves and filling are completely encased in each packet. Leave on parchment paper and transfer to a baking sheet.
- Bake at 400 degrees for 15 minutes, or until pastry is golden brown.
