Simply Shrimp and Spinach Squares #5FIX

5-Ingredient Fix Contest Entry. I wanted to create something impressive and gourmet-ish. I was very surprised that the mashed potatoes MADE this recipe, making a very creamy delectable filling. Using puff pastry just topped it all off!! Note: Using parchment paper makes it easy to work on and then to transfer completed squares to a baking sheet. However, a nonstick pan and spatula could be used instead. Also, the pastry sheets need to be defrosted, according to the package directions, in advance. Show more

Yields: 4 squares

Ingredients

  • 1 (17 1/3ounce) package puff pastry sheets, defrosted
  • 6  ounces fresh spinach leaves
  • 1 12 cups  tiny cooked baby shrimp
  • 1  cup  Simply Potatoes Traditional Mashed Potatoes
  • 14 cup  garlic & herb spreadable cheese (such as Boursin or Alouette)

Directions

  1. Preheat oven to 400 degrees.
  2. Unfold pastry sheets onto parchment paper and cut each sheet into 4 squares. Top 4 of the squares with 1/2 of the spinach leaves.
  3. Combine the shrimp, potatoes, and cheese. Spoon this mixture evenly onto the spinach leaves. Top mixture with the remaining spinach leaves.
  4. Cover each spinach/mixture topped square with the remaining 4 pastry sheets and carefully crimp the edges so that all the spinach leaves and filling are completely encased in each packet. Leave on parchment paper and transfer to a baking sheet.
  5. Bake at 400 degrees for 15 minutes, or until pastry is golden brown.
