Simply Quick Chicken Thigh Cacciatore for Two

I had a package of chicken thighs and this is what came out. It has the perfect flavor, I used boneless chicken thighs, but you can use with bones if you desire. We served it over no-yolk noodles. Show more

  1. Clean chicken and wash.
  2. Cut into small pieces.
  3. Chop onion and pepper.
  4. Mix spices with flour (I use a plastic bag).
  5. Pat chicken dry and coat with flour mixture.
  6. Fry chicken until brown (about 10 minutes or so).
  7. Use a large enough skillet the chicken can lay out in a single layer.
  8. Using a non-stick skillet is best.
  9. Push aside chicken and add onions and peppers.
  10. Fry until onion is no longer opaque (short time).
  11. Add tomatoes and wine.
  12. Bring to boil and turn down to simmer.
  13. Cover and cook for 40 minutes.
  14. Stir once or twice during cooking.
  15. Add mushrooms.
  16. Return cover and cook another 15 minutes.
  17. When done the chicken should be falling apart and falling off the bones (if you used chicken with bones).
  18. Serve standalone or over rice/noodles.
