Simply Dirty Rice

Ingredients
- 3 (10 1/2ounce) cans beef consomme
- 1 (10 1/2ounce) can cream of mushroom soup
- 1 1⁄2 cups uncooked rice
- 1⁄2 lb sage sausage
- 1⁄2 medium sweet onion, chopped
- 4 tablespoons salted butter (stick butter)
- 4 tablespoons dried parsley
Directions
- Preheat oven to 400 degrees.
- Brown sausage and onion in a large skillet.
- Mix beef consume, mushroom soup, rice, and cooked sausage and onion in a dutch oven (cast iron is always best).
- Slice the stick butter into thin slices and heavily layer on top of mixture.
- Top the dish with all of the parsley.
- Cover the dutch oven and bake for 1 hour. Fluff with a fork to check, but
- **do not "stir" the rice until ready to serve**.
