Simplest Cake in the World!

Yields: 1 cake

Ingredients

  • 1  kg  mixed dried fruit, use some prunes and figs for extra richness
  • 2  cups self raising flour
  • 2  cups  orange juice concentrate (I substitute 1 cup of juice with rum or try Baileys Irish cream)
  • 1  tablespoon cocoa powder
  • 2  teaspoons mixed spice (or 2 teaspoons cinnamon and ½ teaspoon ground cloves)

Directions

  1. Line a high cake tin with baking paper.
  2. Mix the ingredients together, pour into tin and bake at 200 C for 20 minutes, 175C for 20 minutes and 140 C until cooked- just over an hour in fan forced ovens.
  3. The whole cooking time is about 2- 2 ½ hours in total.
