Yields: 12 Muffins

Ingredients

  • 4  eggs
  • 1  cup sugar
  • 13 cup  vegetable oil
  • 12 cup  orange juice
  • 12 tablespoon  zested  orange peel
  • 1 12 cups  grated carrots
  • 14 teaspoon cinnamon
  • 3  tablespoons baking powder
  • 2  cups whole wheat flour
  • 48  white chocolate chunks (optional)

Directions

  1. Mix eggs, sugar, oil, orange juice and orange juice in a mixing bowl.
  2. Add zested orange peel, grated carrots and cinnamon and mix.
  3. Slowly mix in whole wheat flour.
  4. (Optional) Pour mixture into muffin cups halfway and add one or two white chocolate wafers/chunks into the middle.
  5. Fill the muffin cups all the way to the top. There should just be enough for 12 cups.
  6. (Optional) Add remaining chocolate into the cups, pushing them down into the batter.
  7. Bake at 375 degrees farenheight for 20 mins or until toothpick comes out clean.
