Simple Strawberry Cake

What to do with all those fresh strawberries? Try this simple and extremely delicious cake. To make it even easier, I slice the berries with my egg slicer! You can have this in the oven in just a few minutes, and it really looks like you worked hard on it!

• Yields: 1 cake

Ingredients

• 1  pint fresh strawberries, sliced, fresh
• 3⁄4 cup sugar
• 1 (3 ounce) package  raspberry gelatin
• 1 1⁄2 cups mini marshmallows
• 1 (18 1/4ounce) box  yellow cake mix
• 2  eggs
• 1 1⁄4 cups water
• 2  tablespoons canola oil

Directions

1. Toss berries with sugar. Place in bottom of a 9x13 baking dish.
2. Sprinkle gelatin over berries.
3. Sprinkle marshmallows in pan.
4. Combine eggs, cake mix, water and oil. Beat with electric mixer 2 minutes. Pour evenly in pan.
5. Bake at 350 for 30-35 minutes.
6. Let cool, and invert pan onto serving platter.
