Simple Spinach Pappardelle

Quick and good. Very simple, for those week night meals. It's a starch and veggie side.

Ingredients

  • 8  ounces pasta, dry pappardelle
  • 3  cups  Baby Spinach
  • 14 cup parmesan cheese, shredded
  • 1  tablespoon butter
  •  salt & pepper

Directions

  1. Boil pappardelle according to package directions.
  2. Put spinach, parmesan and butter in a large bowl.
  3. Drain pasta, add to bowl.
  4. Toss to mix, coat and wilt spinach.
  5. Season with salt and pepper.
