Simple Ropa Vieja in the Crockpot

I got this recipe from a co-worker. Although there are other ropa vieja recipes on Recipezaar, i didn't see any that called for a crockpot. Sofrito can be found the frozen 'ethnic foods' sections, in a little tub. Sazon can be found in the dry 'ethnic foods' section, and it comes in a box full of little packets. Please note that Recipezaar will not accept "one envelope of sazon" as a measurement, so I had to call it "1oz", instead. Show more

Ready In: 4 hrs

Serves: 6-8

Ingredients

  • 2  lbs  flank steaks (one big flap)
  • 1  pinch  salt and pepper
  • 1  onion, chopped
  • 1  bell pepper, chopped (any color)
  • 1  bay leaf
  • 12 teaspoon cumin
  • 2  tablespoons  sofrito sauce
  • 1  ounce  Goya sazon tropical
  • 8  ounces tomato sauce

Directions

  1. Season flank steak with salt and pepper and sear/brown on both siides. Place in crockpot.
  2. Add remaining ingredients (except onion and bell pepper) and cook on LOW for 4 hours or HIGH for 2 hours.
  3. Saute onion and bell pepper until translucent. Add to crockpot.
  4. Cook for another 4 hours on LOW or another 2 hours on HIGH.
  5. Ropa vieja is done when you can shred it easily with two forks.
  6. Serve over yellow rice, with or without fried plantains.
