Simple Pumpkin Quickbread

Ingredients
- 1 cup unbleached all-purpose flour
- 1⁄2 teaspoon salt
- 1⁄2 cup sugar (raise or lower or use a sub, to taste)
- 4 tablespoons canola oil
- 2 egg whites
- 1 cup pumpkin puree
- 1 teaspoon pumpkin pie spice
Directions
- Mix all the ingredients in a bowl together.
- Pour into a 9 x 5 loaf pan greased with cooking spray and bake for 45-60 minutes at 350F or until set, or use your bread machine's quickbread cycle according to the manufacturer's instructions.
