Simple Potato Soup

Serves: 10-12
Yields: 1 large pot
Ingredients
- 14 small potatoes, peeled and cubed
- 8 cups water
- 1 1⁄2 teaspoons salt
- 1 1⁄2 teaspoons black pepper
- 2 tablespoons milk
- 11 ounces Velveeta cheese, roughly cubed (approx. 1/3 large block)
- 1⁄2 green pepper, finely chopped (optional)
Directions
- Combine all ingredients in large soup pot or stock pot.
- Bring to a boil.
- Reduce heat, cover, and simmer for approximately 30 minutes. Stir frequently. The soup is done when the potatoes are soft.
