Simple Pot Roast

Serves: 4-6
Ingredients
- 2 cups chopped carrots
- 2 cups chopped potatoes
- 1 cup chopped celery
- 1 (2 -2 1/2lb) beef roast
- 3 cups beef broth or 3 cups beef stock
Directions
- Prepare the vegetables. It may not be necessary to peel the potatoes depending on the variety you choose, but do peel the carrots (except baby carrots). Combine all ingredients in a 3-1/2 quart crockpot. Add salt and pepper to taste.
- Cover and cook on LO heat for 8 hours.
