Simple Delicious Barley

Yields: 4 cups
Ingredients
- 1 cup pearl barley
- 1 (14 ounce) can beef broth
- 1⁄2 cup water
- 1 tablespoon cumin
- 1 tablespoon garlic powder
- 2 tablespoons olive oil
Directions
- Bring broth and water to boil.
- Add barley, reduce heat and cover. Note, the lid will rattle and the the barley will make starch bubbles, this is ok.
- Simmer for 45 minutes, until barley is visibly moist but there is no liquid at the bottom of the pan. Turn off heat, cover for 1-2 minutes.
- Remove lid and stir in olive oil , cover again for another minute.
- Add cumin and garlic or Mrs Dash. a pinch of salt and pepper to taste is good. Stir thoroughly.
