Ingredients
- 1 (32 ounce) can whole kernel corn, drained
- 3 medium potatoes, diced
- 1 onion, chopped
- 2 cups vegetable broth
- 2 cups soymilk
- 1⁄4 cup margarine
Directions
- Combine corn, potatoes, onion, and broth in slow cooker.
- Cover. Cook on low 7 to 9 hours.
- Puree in blender for a smooth, creamy soup, or puree half for a chunkier soup.
- Return mixture to cooker and stir in soy milk and margarine.
- Cook on high 1 hour more.
