Simple Cornbread Muffins With Wheat Germ

Ingredients
- 2 cups yellow cornmeal
- 1 cup unbleached flour
- 1 cup wheat germ
- 8 teaspoons baking powder
- 1 teaspoon salt
- 3 tablespoons sucanat
- 4 eggs, beaten
- 2 cups milk
- 1⁄2 cup melted butter
Directions
- Stir dry ingredients together.
- Make a well, add all remaining ingredients, and stir just until moistened.
- Divide batter between 18 sprayed muffin cups; bake at 400 degrees for 12-15 minutes, and serve hot!
