Simple Corn Casserole

A simple to make, rich side dish--as much a staple at my family gatherings as the paper plates!

Serves: 9

Yields: 1 pan

Ingredients

  • 1 (15 ounce) can corn, drained
  • 1 (15 ounce) can  cream-style corn
  • 1 (8 ounce) box  Jiffy corn muffin mix
  • 12 cup sour cream
  • 12 cup cream cheese, softened
  • 12-1  cup  shredded cheddar cheese

Directions

  1. Combine everything but the cheddar cheese.
  2. Pour into greased 8-inch casserole.
  3. Bake at 425° for 45 minutes.
  4. Top with cheddar and bake and additional 5 min or until cheese is melted.
  5. Let stand for 10 minutes before serving.
