Simple Beignets

easy to make... yummy to eat!!!!

  1. In a bowl, mix together ghee and sugar nicely. Add the milkand stir till sugar dissloves. Let the milk cool down. Meanwhile sift flour and salt and keep aside.
  2. After the milk has cooled down add the yeast and stir till dissolved.
  3. Add half the sifted flour and mix well.
  4. Then add the beaten egg and mix well again.
  5. Add the remaining flour and mix to make a soft, smooth, non-sticky dough using more ghee or flour as required.
  6. Cover the bowl with the dough with a damp cloth and leave to rise for 5 hours 1 hr outside and remaining 4 hrs in the fridge.
  7. After the dough has risen, knead it again and divide it into 3 portions and use as needed. If you have a big rolling pin then roll the dough out all at once.
  8. Roll the dough to about 1/2" thickness and cut it into 2" wide rectangular strips.
  9. Let these strips rest on a floured surface for 20 minute.
  10. After the 20 min deep fry the beignets in hot oil. Adjust the flame to medium high and as you fry turn the beignets only once on each side. They will puff up by themselves and don't need much coaxing to do so :-) 1 min on each side is more than enough to get that nice golden brown colour.
  11. Drain the beignets on paper towels.
  12. Dust the beignets generously with icing sugar using a sieve and a spoon.
  13. In the end, drizzle a little chocolate syrup on the top of the beignets.
  14. Eat them while they're still warm and enjoy!
