Simple and Easy Greek Lentil Soup

Ingredients
- 1 1⁄4 cups lentils
- 1 quart cold water
- 1 cup onion, chopped
- 1 garlic clove, crushed
- 1 1⁄4 teaspoons salt
- 1⁄4 teaspoon pepper
- 2 tablespoons olive oil
- 16 ounces tomatoes
- 1 bay leaf
Directions
- Wash the lentils, drain well.
- Combine lentils with water, onion. garlic, salt, pepper and oil in large saucepan. Bring to a boil.
- Add tomatoes and bay leaf.
- Lower the heat, cover and simmer 45 minutes more, or until the lentils are tender.
