Simple and Delicious Spinach and Artichoke Dip

Ingredients
- 1 cup mayonnaise
- 1⁄2 cup grated parmesan cheese
- 1⁄2 cup shredded parmigiano-reggiano cheese
- 14 ounces artichoke hearts, well-drained and chopped
- 10 ounces frozen chopped spinach, thawed and drained
- 1 red bell pepper, chopped
- 1 cup shredded monterey jack cheese
Directions
- Preheat oven to 350 degrees. Mix the mayonnaise and cheeses. Stir in the artichoke, spinach and red bell pepper. Spread into a one-quart oven proof casserole dish and spinkle with the monterey cheese.
- Bake at 350 degrees for 15-20 minutes until heated through and bubbly and the cheese is melted. Serve with tortilla chips! Delicious!
