Simmering Steak Dinner

Just threw this together for dinner.

Serves: 2-4

Ingredients

  • 1 12-2  lbs  inside round simmering  steak
  • 1  green pepper, seeded and cut into bite sized pieces
  • 1  large sweet onion, peeled and cut into bite sized chunks
  • 4  large garlic cloves, peeled and slide into thick slices
  • 6  carrots, cleaned and cut into bite sized chunks
  • 1 (8 ounce) package  mini bella mushrooms, cleaned and cut into quarters
  • 2  cups beef broth
  •  lowry season salt, to taste
  •  pepper
  • 1  tablespoon  better than bouillon, beef flavor (optional)
  • 14 cup water
  • 1  tablespoon cornstarch
  • 8 -10  small potatoes, peeled, cut into quarters and cooked separately

Directions

  1. Heat oven to 325.
  2. Place steak in a 9x13 baking dish.
  3. Season both sides with the season salt and pepper.
  4. Distribute vegetables evenly over meat.
  5. Pour broth over contents.
  6. Cover with foil tightly and bake for 2 1/2 hours.
  7. When done remove the meat mixture to a serving platter and keep warm.
  8. Pour broth into a sauce pan and heat to simmer.
  9. Mix together the cornstarch and water.
  10. Pour into heated broth and whisk until slightly thickened.
  11. Add the beef flavoring if using and continue whisking until desolved.
  12. Serve along with the potatoes.
