Silverbeet and Fetta Triangles

Yields: 2 triangles
Ingredients
- 1 small bunch silver beet
- 200 g Greek feta cheese
- 2 slices frozen puff pastry sheets
- 1 egg
- 1⁄2 lemon, juice of
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 2 tablespoons butter
- 1 tablespoon olive oil
Directions
- Clean and roughly chop silverbeet.
- Melt butter with olive oil in large saucepan.
- Saute silverbeet until it reduces in size and goes limp.
- Add salt, pepper and lemon juice.
- Remove from heat and allow to cool.
- Preheat oven to 220 degrees C.
- Combine with crumbled feta cheese.
- Divide mixture into each puff pastry slice.
- Turn puff pastry corner to corner to make a triangle and press ends together.
- Brush with beaten egg.
- Bake in oven for 20 minutes.
