Shucky Beans

Serves: 6-8

Ingredients

  • 1  cup  dried green beans
  • 4  cups water
  • 34 teaspoon salt
  • 2  inches  square salt bacon

Directions

  1. Wash about 1 cups of dried green beans.
  2. Place them in a pan with 4 cups of water.
  3. Let stand overnight.
  4. Next day, pour off the water in which the beans were soaked and rinse them well.
  5. Put the beans into a large pot with a close fitting lid.
  6. Add 3/4 teaspoon salt. 3 cups of water, and a 2 inch square of salt pork. (can use bacon grease).
  7. Cook over medium heat for about 3 hours, adding more water if need.
  8. Note:.
  9. Dried beans swell as they soak, what you think is just a little turns out to be a lot when cooked.
