Shrimp With Roasted Red Pepper Cream

I found this recipe in Southern Living. It is fast and elegant.

Ingredients

  • 1 (8 ounce) package  vermicelli
  • 1 (12 ounce) jar  roasted red peppers, drained
  • 1 (8 ounce) package reduced-fat cream cheese, softened
  • 12 cup  fat-free low-sodium chicken broth
  • 3  garlic cloves, chopped
  • 12 teaspoon  ground red pepper
  • 2  lbs  cooked peeled large shrimp
  • 14 cup  chopped fresh basil

Directions

  1. Prepare pasta according to package directions, omitting salt and oil.
  2. Keep pasta warm.
  3. Process red peppers and next 4 ingredients in a blender or food processor until smooth.
  4. Pour mixture into large skillet.
  5. Cook over medium heat 5 minutes stirring often, until thoroughly heated.
  6. Add shrimp and cook 2-3 minutes until thoroughly heated.
  7. Remove from heat.
  8. Serve over hot cooked pasta.
  9. Sprinkle with basil.
