Shrimp Toast

Yields: 32 shrimp toasts
Ingredients
- 1 lb shrimp, shelled and minced
- 1 teaspoon minced ginger
- 1 teaspoon dry sherry
- 1 teaspoon salt
- 1 egg white
- 5 minced water chestnuts
- 1 teaspoon cornstarch
- 1⁄4 teaspoon msg
- 8 slices day old sandwich bread, crusts removed
- 2 tablespoons minced ham
- 2 tablespoons parsley, minced
Directions
- Mix shrimp, ginger, sherry, salt, egg, water chestnuts, cornstarch and msg. Cut each piece of bread into four squares. Place a mound of shrimp mixture on each bread square. Garnish each square with minced ham and parsley. Press onto bread in a little mound. Heat oil and deep fry squares until both sides are golden brown. Serve hot. (No, the mixture does not drop off the toast!).
