Shrimp Salad

Serves: 4-6
Ingredients
- 1 lb shrimp, cooked and cleaned
- 1⁄2 cup chopped celery
- 2 boiled eggs, chopped
- 2⁄3 cup mayonnaise
- 1⁄8 teaspoon tarragon leaf
- 1⁄4 teaspoon white pepper
- 1 dash cayenne pepper
- lemon slice
Directions
- Reserve about 6 shrimp for garnish and cut remaining shrimp into bite sized pieces.
- Add celery and eggs.
- Combine remaining ingredients; spoon over shrimp. Mix gently.
- Chill. Garnish with whole shrimp and lemon slices.
